Definitely an air leak somewhere. Did you cap the holes you created in the EGR delete? Also, check plenum torque amounts. They should be 12-15lbs. I do 13lbs, to be safe. Do an entire go over of every vacuum line. Try spraying starter fluid around your plenum gasket area - the rpm will change as you do so, indicating a leak. You can also try using a piece of vacuum line as a stethoscope while searching for any air leaks.
